Amaranth Lake (Acid Red 27) to dark reddish brown powder or granules. Odorless. Light resistance, heat resistance (105℃), oxidation resistance, poor reducibility, not suitable for fermented food and food containing reducing substances. Stable to citric acid and tartric acid. Turns dark red on alkali. In case of copper, iron is easy to fade. The dyeing power is weak. Soluble in water (17.2g/100ml, 21℃) and glycerol. An aqueous solution is purple. Slightly soluble in ethanol (0.5g/100mL50% ethanol)
