Tartrazine (Lemon yellow) is one of the three primary colors of edible synthetic pigment and is also the most widely used synthetic pigment for food coloring in the world. Soluble in water, glycerol and propylene glycol, slightly soluble in ethanol, insoluble in grease. Good heat resistance, acid resistance, light resistance and salt resistance, stable to citric acid and tartric acid. It is a bright yellow powder or particle, azo-type heterocyclic structure.
